Ingredients
1/2 block of soft or medium tofu 1 1/2 cup cabbage, shredded 1/4 carrot shredded 1/4 cup mushrooms, finely chopped 1/4 cup water chestnuts, finely chopped 1 spring onion, finely sliced 1/2 tablespoon sesame oil 1/2 tablespoon tamari 1 garlic, grated 1 teaspoon ginger, grated 12 rice paper wrappers Dipping sauce 1 tablespoon tamari 1 tablespoon sesame oil 1/2 teaspoon lime juice 1 tablespoon crunchy chilli sauce |
Method
1. Place all filling ingredients into a bowl and using the back of a spoon mash the tofu and stir to combine.
2. Working one by one, soak the rice paper in warm water for 5 seconds or until soft. Place 2 tablespoons of filling in the middle and fold into a parcel. Wrap in a second wrapper and set aside. Repeat steps for remaining rice paper wrappers.
3. Place a medium sized saucepan over a medium high heat and add 2 cm of vegetable oil.
4. Cook dumplings for 2 minutes on each side or until golden brown and crispy.
Note: hot oil can spit so be careful! Rice paper can also bubble so keep an eye out.
5. Combine tamari, sesame oil, lime juice in a small bowl. Dollop crunchy chilli sauce in the middle and serve with dumplings.
